The tops were moist and they smelled scrumptious like a sugar cookie but the inside was terribly dry even when sealed in an airtight container.

The cream color is likely from the vanilla. Did you use a colourless vanilla? You can purchase it from Michael’s; its in a brown bottle and completely clear.
